500g boiled potatoes
100g PAPATHANASIOU goat cheese
2 egg yolks
The egg whites, beaten
Sunflower oil for frying
Mash the potatoes in a dish by adding the butter, cheese, eggs and spices while mixing constantly. Let the mixture cool down and roll it up into small balls/fritters. Put them in the fridge for one hour until tight. Put the flour in one ball, the beaten egg in another and the ground cereal in a third bowl. Bread the fritters by first dipping them in the flour, then in the egg and finally
in the cereal and fry them in the sunflower oil over medium eat until brown on all sides.
Strain the fritters on absorbent paper and serve while hot.
