Boil the penne according to the cooking times stated on the packet and keep the pasta warm.
Prepare the sauce while the pasta is boiling. Sauté the garlic in a pan over medium heat until caramelised, without burning it, and add the cherry tomatoes cut in half. Also add the red pepper and continue to sauté until soft. Add the vegetable stock and broccoli, and continue to boil until the broccoli is ready and the liquids have been absorbed. Throw the penne and goat cheese into the pan and mix so that the ingredients can blend.
