1kg fresh PAPATHANASIOU anthotyro
2 tbsp fresh mint, finely chopped

Crumble the anthotyro in a large bowl, beat the eggs and pour them into the bowl, and add the mint, salt and pepper. Gradually throw in the flour and stir constantly until it forms a mixture that can be kneaded and easily moulded in the shape of a fritter without sticking to your hand.
Spread parchment paper on a baking sheet, place the fritters on the parchment paper, brush olive oil on top and bake at 180 degrees for 20 minutes until golden brown. Serve hot, plain or with a sweet sauce of your liking.
NOTE: You can also make these bites for a children’s party by giving them different shapes when placing them on the baking sheet.
