ROOSTER WITH GRAVIERA IN A CLAY POT

Ingredients
A rooster cut into pieces
150g butter
200g PAPATHANASIOU graviera
5 garlic cloves
1 green pepper cut in strips
2 tbsp mustard
2 grated tomatoes
Salt
Pepper grains
Juice of one lemon

Execution
Mix all the ingredients in a large bowl and put them in a clay pot or Pyrex dish and cover the pot/dish with foil. Roast at 200°C
for approximately 1 hour and 15 minutes. Remove the foil for the last 15 minutes in order for the roast to be gratinated and to catch colour.
