GIOULBASI

Ingredients
3kg mixed lamb, pork and beef
2 large sheets of baking paper
2 cubanelle peppers
2 green peppers
250g PAPATHANASIOU Kefalograviera
4 garlic cloves
One sprig of rosemary
1 tsp oregano
½ tsp chilli flakes
7- 8 guinea grains
Salt and pepper
2 tbsp olive oil

Execution
Cut the meat into pieces and put it in a bowl. Thickly chop the peppers and kefalograviera, and throw them in the meat. Add the
garlic cloves (whole), the whole sprig of rosemary, the oregano, chilli flakes, guinea grains and season with salt and pepper. Pour the oil over and mix the mixture well.
On the work bench, cross the two baking paper sheets over one another and  put the mixture from the bowl in the centre and seal properly. Tie the package with twine string, put it in a pan and bake in the oven at 200-220°C for three hours.
