In pies alongside feta, for saganaki, grated over pasta, to finish risotto, in béchamel, with artisan sourdough and dried fruits, even in a simple toast.
Pairs especially well with dry, medium- to full-bodied wines based on Cabernet Sauvignon, Merlot, Shiraz, Primitivo and Cabernet Franc. Also excellent with full-bodied whites such as an oaked Chardonnay.
