Ingredients:<\/h4>\n\t\t\t\t\t\t\t<\/div>\n\t\t\t\n\t\t\t\t\t\t\t
\u2022 1 large onion, chopped
\n\u2022 2 cloves garlic
\n\u2022 600 g peeled pumpkin (diced)
\n\u2022 300 g carrots (peeled and chopped)
\n\u2022 1 medium potato, peeled and chopped
\n\u2022 2 tbsp olive oil
\n\u2022 1 tsp fresh thyme
\n\u2022 700 ml vegetable broth
\n\u2022 Salt and freshly ground pepper
\n\u2022 120 g Papathanasiou Feta, crumbled for serving
\n\u2022 Pumpkin seeds for garnish
\n\u2022 Optional: a few drops of good olive oil <\/div>\n\t\t\t\n\t\t\t\n\t\t<\/div>\n\t\t\n\t\t\n\t\t
\n\t\t\t\n\t\t\t
\n\t\t\t\t

Method:<\/h4>\n\t\t\t\t\t\t\t<\/div>\n\t\t\t\n\t\t\t\n\t\t\t\n\t\t<\/div>\n\t\t\n\t\t\t\t
\n\t\t\t

1. Heat the olive oil in a pot and saut\u00e9 the onion with the garlic for 3\u20134 minutes, until softened.
\n2. Add the pumpkin, carrots, potato, and herbs. Stir for 2\u20133 minutes to coat well with oil.
\n3. Pour in the broth and simmer for about 30 minutes, until the vegetables are tender.
\n4. Blend with an immersion blender until smooth and velvety. Adjust salt and pepper to taste.
\n5. Serve the soup hot, with pieces of Papathanasiou Barrel-Aged Feta, pumpkin seeds, and a few drops of olive oil. <\/p>\n\t\t<\/div>\n\t\t
