Low-Fat White Sheep & Goat Cheese

Description

Our low-fat white cheese is made with the same know-how and method used for our Feta PDO. It is produced mainly from sheep’s milk, sourced predominantly from flocks grazing in the mountainous areas of our region. The goat’s milk we use comes from the same rugged, highland landscape.
Taste Profile: Semi-hard, relatively creamy texture and white color. Milky with a light buttery note, rounded and persistent on the palate. The finish is lightly piquant and pleasant, with subtle pasture notes.

Baked with olive oil, in tomato salad, in spinach quiche, traditional pies, sandwiches, bruschetta, and on cheese platters.

Full-bodied whites with delicate acidity such as Greek Malagousia or a Chardonnay from Latin America. Also excellent with sweet white wines such as Assyrtiko.
