Ingredients
500g traditional Greek sausage
8-10 cubanelle peppers
3 ripe tomatoes
1 tsp sugar
Thyme or Oregano
Olive oil
250g PAPATHANASIOU feta cheese (PDO)
pepper
Salt

Execution
Cut the sausage into medium-sized pieces and fry. Remove from the oil and keep warm. Wash and properly dry the peppers, and them fry them in the olive oil until soft. Add the tomatoes, finely chopped, as well as the herbs, salt and pepper. Lower the heat and let it boil well. Add the fried sausages and simmer until the sauce is thick. Just before serving, while still hot, crumble in the feta cheese and, optionally, add fresh herbs of your liking, such as marjoram, basil or mint!
