CHEESE STICKS (BATON SALE)

INGREDIENTS
150g all-purpose flour
60 – 80g cornmeal
125g cold margarine in cubes
60g PAPATHANASIOU Kefalograviera, finely grated
40g PAPATHANASIOU kefalotyri, finely grated
1 whole egg + 1 egg yolk
1 pinch of salt
PROCESS
Preheat the oven at 180°C . Sift both flours and add the salt. Add the margarine cubes and knead the mixture. Add the grated cheese and eggs, and knead until you have a soft dough that does not stick to your hands. Let the dough rest for 20 minutes in the fridge. Shape sticks out of the dough, trying to make them uniform in size and thickness. Cover a baking sheet with non-stick baking paper and place the sticks on top. Brush the remaining egg white on top and sprinkle with a little more
grated cheese.
Put the baking sheet in the oven for 12-15 minutes until golden brown.
Remove from the oven and let it cool for 5 minutes.
Then put them on a rack to dry.
