ROOSTER WITH HILOPITES

Ingredients
1 rooster, approximately 1.5kg
1 onion, finely chopped
1 can of tomato concasse
1/2 glass red wine
6 tbsp olive oil
1 tsp salt
1 pinch of sugar
1 cinnamon stick
2 – 3 guinea grains
1 packet of hilopites
200g PAPATHANASIOU dried mizithra

Execution
Cut the rooster into portions, season with salt and pepper and brown with olive oil. Add the onion and sauté all the ingredients for another 5 minutes while mixing. Pour the wine over and let it come to a boil. Throw in the concasse, tomato juice, sugar, cinnamon, guinea grains and salt, as well as 2-3 glasses of hot water and let the rooster simmer for 1 hour and 30 minutes. Boil the hilopites in salt water and strain. Put the hilopites pasta in the sauce and add some hot water. Continue to roast in the oven for 30 minutes. Let the food rest for 10 minutes before serving.
